Salads are always in demand in our family. Sometimes I make them as a side dish or when I want to have a light dinner I make one of my favorite salad recipes. 1. Creamy Cucumber Salad
It is a creamy and flavorful summer salad recipe. This is always in our rotation menu. I like the dressing of this recipe, it’s like a creamy sauce made with a mix of sour cream, lemon, and dill.
I like to add onions in most of my salads, here you can use either green onions or Sweet Vidalia onions. If you are not a fan of sour cream you can replace it with Greek yogurt but the dressing won’t be thick.
I have used dill but you can use parsley too. Use the dressing just before serving. You can use English cucumbers or any other cucumber but I like Garden cucumber. You can also replace lemon with mayonnaise if you want a thicker sauce.
It is a quick recipe and takes only 10 minutes. The ingredients include sour cream, cucumbers, lemon juice, garlic, onion, and dill. The salad is best served with grilled steak or hamburgers.
2. Pasta Salad
It is one of the best salad recipes for potlucks and picnics. You can choose the pasta of your choice, I prefer fusilli pasta for this salad. Cherry tomatoes are so flavorful, so it’s a must.
I used Persian cucumber but you can use English cucumber too. I like to make the salad greener so I used arugula for this salad and yes, herbs are a must.
Pasta salad dressing is one of the easiest to make, you need a mix of Dijon mustard, salt, red pepper, lemon, garlic, and olive oil. You need a Dutch oven. After cooking the pasta let it cool down completely and then add the ingredients.
The ingredients for the salad include fusilli pasta, pine nuts, feta cheese, chickpeas, Persian cucumbers, arugula and parsley.
You can make it gluten-free or vegan. It can be a perfect make-ahead recipe and you can store it in an airtight container in the fridge, it will be good for up to 3 days.

You can either serve it as a side dish or even enjoy it as a main course meal. This is perfect for a quick lunch too. I have used roasted chicken breast but you can use rotisserie chicken, canned chicken, or air fry chicken thighs also.
I sometimes call it a fancy salad as I add grapes to the salad, it makes the salad sweet. Toasted pecans and celery add so much flavor. If you don’t like celery then put cucumbers instead.
The dressing is a mix of mayonnaise, salt, pepper, sour cream, dill and lemon juice. You can serve the salad in lettuce cups or use it for a croissant sandwich. It takes 25 minutes including 5 minutes of prep time and 20 minutes of cooking time.
The ingredients include grapes, pecans, chicken breasts, red onion and celery. Keep the leftovers in a container with a lid in the fridge and it will be good for up to 4 days.
